While learning my craft in a fine dining environment around 2010, I couldn’t really explore exotic drinks as much as I wanted to, but I did manage to get Smith & Cross Rum into our selection behind the bar. But I needed to hide the bombastic flavors in an elegant presentation. As I searched for the name I started thinking about the Caribbean, the Florida Keys, Key Largo, Montego, “baby why don’t we go down to Kokomo,” Beach Boys video, who’s on the drums?
¾ oz Licor 43
¾ oz Carpano Antica Sweet Vermouth
¾ oz Fresh Lime Juice
¼ oz Orgeat Syrup
2 drops Bittermen's Tiki Bitters
Shake, double strain into chilled coupe. Garnish with Grapefruit peel.
