I just wanted to use pumpkin in a drink without using pumpkin….so I used pumpkin seeds, roasted them and made a syrup in this Old Fashioned/Sling style cocktail.


1 oz Camus VS Cognac
1 oz Plantation Stiggin’s Pineapple Rum
¼ oz Cynar Amaro
¼ oz Roasted Pepita Demerara Syrup *
4 dashes Bitter Queens Chocolate Walnut Bitters
1 drop Saline Solution *


Stir all ingredients in a mixing glass with ice until well chilled and strain into a chilled Old Fashioned glass over a large ice cube.
Garnish with an Orange Twist.

Roasted Pepita Demerara Syrup
30 g raw Pepitas, 200 g Demerara Sugar, 100 g Water, ½ tsp Kosher Salt/Saline Solution.

Roast the Pepitas until a good amount of char has formed (but not completely burnt). Then transfer to a pot with the Sugar, Salt and Water and bring the mixture to a low simmer, then bring the heat down to its lowest to help dissolve the Sugar. Strain out the Pepitas.

Saline Solution
Combine 75 grams of Warm Water and 25 grams of Kosher Salt/Fleur de Sel/Sea Salt (NOT iodized!) until Salt is dissolved.
