A complex beverage that showcases the most divisive of herbs: cilantro. I first discovered this cocktail at Cafe Cluny, the sister restaurant of Cafe Luxembourg. I was instantly enchanted. As a native of LA, I LOVE cilantro and this was the first time I'd seen it in a cocktail. The result is complex, but inviting, refreshing, but dangerous.
2 oz cilantro-infused gin*
1 oz fresh lemon juice
1 oz Simple Syrup
4-5 dashes Peychaud bitters
Rinse of Pernod
Pour a few drops of Pernod into your chilled martini glass and drain. The Pernod is crucial, but a little goes a long way. Shake the remaining ingredients with ice before straining into your martini glass.
Tools needed: martini glass, cocktail shaker.
*For cilantro-infused gin:
Take a handful of cilantro, including stems, and soak it in gin for 2-3 days, before straining it back into your gin bottle.
