When a friend gifted me fresh pomelo from his tree, it became a rush to find as many uses for the juice as I could. Its unique flavor (not quite grapefruit, not quite lemon, not quite lime) is well-suited for designing riffs on old favorites.
That’s where this drink comes in. It’s a riff on the Final Ward, which itself is a riff on the Last Word. I rebalanced it to highlight the pomelo and changed the spicy Green Chartreuse for the milder Yellow Chartreuse.
1½ oz Rittenhouse Rye
¾ oz Yellow Chartreuse
¾ oz Pomelo Juice
2 dashes Orange Bitters
Shake all ingredients with ice. Strain into a chilled Nick and Nora glass (or coupe). Garnish with maraschino cherries.
