Cocktail Diary: What is the last obstacle you overcame? Meet my new tiki baby!  She is funky, fresh, and fun...just like us. Ingredients: - Mount Gay Barbados Rum - Plantation 3 Stars White Rum Instructions: Build in Boston Shaker Medium Shake (Make sure the coconut milk is mixed thoroughly) Double Strain over Crushed Ice/Pebble Ice into Snifter Glass or large Tiki Mug Garnish with Mint Bouquet, barspoon of "Jam", fresh grated nutmeg Blackberry Vanilla Bean Syrup 1000g Black Berries - Muddled in a large pot 1000g Sugar 500g Water 2 Tsp Vanilla Bean Paste Combine in small pot Start at medium heat, bring to boil. Turn to low heat and let simmer for 10 minutes. Remove from heat, strain syrup and seperate the "jam" from the syrup with a fine mesh chinois strainer. The syrup should be in one container and the jam in the second container to be used as garnish. Once cool, label and store in fridge.
