I have absolutely fallen in love with Baijiu.  It is the traditional spirit of China and could not be more diverse as a category.  Saying Baijiu is like saying "white spirit".  Think of how diverse the flavors of white spirits are from Vodka, to Gin, to Rum, to Moonshine!  Baijiu can be fairly nuetral in flavor or can be incredibly savory and rich.  This Ming River Baijiu is in a category called 'Strong Aroma'.  While it does have very unique savory elements, to me it bursts with Tropical Fruit notes.


In my opinion, Baijiu is the perfect addition to any bar selection that specializes in Tropical or Tiki drinks.  I'm just beginning to explore the possibilities but this riff on a classic Mai Tai is a great start!

Ingredients

1½ oz Ming River Baijiu

¾ oz Fresh Lime Juice

½ oz Orange Liqueur

¼ oz Orgeat Syrup

¼ oz Simple Syrup

¼ oz Wray & Nephew Overproof Rum

Instructions

Frappe Shake with Crushed Ice and dump into Old Fashioned Glass.  Top with Crushed Ice and garnish with Fresh Mint.
