We may never know who created the Airmail. It was brought to most of the drinking public’s attention when Esquire published their Handbook for Hosts in 1949. But it appears that the Bacardi Rum published a recipe for this drink in one of their pamphlets around 1930 coinciding with airmail delivery from Cuba becoming available. Some have described it as a Rum variation on a French 75 but judge for yourself. It’s one of a handful of classic drinks featuring Rum that deserves another look.
1 ½ oz White Rum
¾ oz Lime Juice
¾ oz Honey Syrup
Shake/Strain into Coupe. Top with Sparkling Wine.
